Post Alyn Weekend (again)

Its been one year since the last Alyn ride.  Here is last years post.   Three of our close friends make the ride this year.  They have been preparing for the past three months, riding between 50 and 75 kilometers each friday and smaller rides during the week.   The ride begins on Sunday and ends on Thursday, covering more than 400 kilometers.  All of our friends finished the ride, but they are totally wiped out!  So, they invited themselves over for lunch!  In addition, we have two young ladies from Michlelet Mevaseret Yerushalayim (MMY).  They heard about us from one of their friends who stayed with us earlier this year.

We were invited out for Friday night dinner, so my only responsibility is cook for Shabbat lunch.  Looks like an easy shabbat with our friends.    As you can guess from the menu, zucchini is in season.

Recipe: Crock Pot Chicken and Rice (by Akiva Davis)

This is a grandmothers recipe.  It was explained to me as a process, with no specific quantities.  The recipe below is how I made it today.  It would seem that you can mess with it at will and not make a significant difference in the final outcome.  We'll see tomorrow at lunch!

4 cups of rice (uncooked)
3 large onions, chopped
5 cloves of garlic, chopped
4 large zucchinis, 1/4 inch slices
2 tsp salt
1 tsp thyme
1 tbsp paprika
1 bay leaf
1 tsp ground pepper (fresh is best)
1 Kg (2 pounds) of dark turkey meat (you can also use a whole chicken cut in eighths)

Par-boil the rice in 8 cups of water.   I would suggest bringing it to a boil and then taking the pot off the flame.

Saute the onions and garlic on a medium flame until the onions begin to brown.

Using a large crock-pot, put in 1/2 of the onion mixture.  Layer on 1/2 of the rice.   put in the meat (chicken or turkey) and season with everything except the paprika.  Layer on the rest of the rice.  Put in the sliced zucchini and cover with the remaining onions.   Sprinkle on the paprika.  Put it enough water to cover the zucchini.  I used about 6-8 cups.

Set the crockpot on low and wait for 12-18 hours.

A change of pace (Kidney Failure)

Simply put, both his kidneys are damaged and scarred from some infection or defect that happened years ago.  They will likely cease to function sometime within the next six months. The good news is that there is no immediate danger to his life.  Kidney Dialysis is a viable option and can maintain his health for up to ten or more years if necessary.  Unfortunately, the process is not easy and there are potential side effects. Unusual pesach meals part 2: Zupa Chrzanowa

What was I going to do with the horseradish root that I used for the pesach seder?  5 inches of spicy goodness.  Then I found this recipe for Zupa Chrzanowa,  Horseradish soup. I tried to keep close to the version in the link.  I made my vegetable stock from kitchen leftovers, carrot peels, onion skins, the green parts of leeks, celery and artichoke trimmings.  All parts that I would usually just throw in the trash.  They too contributed to my cooking today. TX +2 days

The transplant was on Monday afternoon. As I write this, its Wednesday afternoon. Call it 48 hours since my son received his new kidney. My wife and I are taking shifts at the hospital. She had the first night, I had the second. Tonight is her turn again. I just got back from the hospital and that's why there have been no posts. There is no Internet in the transplant ward. Medically, my Asaf is doing VERY well (as is the donor). When we went in, Asaf's creatinine level was about 6.4 mg/dL (GFR: 12). It means that his kidney was pretty much not doing anything. Today, we got the latest results. His new creatinine is 2.03 mg/dL (GFR: 46). That's better than my own and almost in the normal range (0.9 - 1.2 mg/dL). Each day its getting better and better. What this means is that his new kidney is working! He is able to eat a normal meal and is no longer on a restricted diet for kidney disease. This is great news!
